Cornish Fairings
100 gr plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
50 gr butter or margarine
50 gr caster sugar
3 tablespoons golden syrup
lightly grease two baking trays (or use waxed paper). Sift the flour, baking powder, bicarbonate of soda and spices into a bowl. Rub in the butter or margarine until the mixture resembles fine breadcrumbs. Stir in thesugar, then warm the syrup in a saucepan and stir it into the dry ingredients to give a stiff dough.
Divide the mixture into 20 a form each piece into a ball.
Place the biscuits well apart on the prepared baking trays.
Bake in a moderately hot oven (200C, 400F, gas 6) for 8 - 10 minutes, or until the fairings are golden brown. Allow the biscuits to cool on the trays for a few minutes before transferring them to a wire rack to cool completely.
